This recipe is perfect for people who love veggies and vinegar! It’s great as a side dish or the main entree. It can be saved for up to a week refrigerated in a container. Hope you enjoy!

note: if you aren’t fond of vinegar add more oil!

  • 1 Cucumber
  • 2 Carrots
  • 1/2 cup Apple Cider Vinegar
  • 1 tablespoon Olive Oil
  • 1 tablespoon Honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
Things you’ll need:
  • bowl
  • fork
  • cheese grater
  1. Shred cucumber and carrots into bowl using the big holes of a cheese grater.
  2. In a separate bowl, add apple cider vinegar, olive oilve, honey, salt and pepper. Mix well.
  3. Pour dressing on vegetables and stir until evenly coated. Enjoy!
